Using uname is more compatible if it comes to FreeBSD and other Unix variants
Detect machine arch using uname
If teddycloud is build from downloaded archive from github, there is no `.git` folder existing which will cause the git commands to fail.
If no values for variables are provided it will fallback to string `unknown` and dirty = 1.
Allow overwrite of versions retrieved by git command
pthread and libmath are linked implicitly when linking sanitizers. If
NO_SANITIZERS is 1, this will lead to a linker error due to the missing
libraries.

Remove deprecated docker-compose version of the yaml file.

At the moment this is only a warning e.g. when shutting down the container:

```
$ docker-compose down
WARN[0000] $HOME/teddycloud/docker-compose.yaml: the attribute `version` is obsolete, it will be ignored, please remove it to avoid potential confusion
```
