Lex Persona - Allow to pass a proper signature profile per steps

Is your feature request related to a problem or unsupported use case? Please describe.
During contract signature with Lex Persona, currently all signatories have the same signature profile. For organization signatory, there is one drawback, as the current signature profile enforce to read the whole document before being able to sign it.

So that means that for batch signature, the signatory has to scroll on every document to sign, this is chore.

Describe the solution you'd like
We could check if Lex Persona to set a custom signature profile for every step of the workflow. If yes, we could imagine to use a signature profile for the learner step and another profile for the organization step.
