Use Auth0

I wanted to remove Identity Server and replace it with an Auth0 or similar OAuth provider. It would remove many of the docker-compose that creates a hard time to get started with the project.
What do you think?

We could accept all kind of PRs (bugfixes, improvements, new features).

I am a bit hands off since I got a kid but I am open to review and discuss ideas!
